Clean up data/schema handling

1. Remove schema inferer stuff – each component just creates Avro schema form what it knows
2. Add good examples and possibly helper methods/classes to help infer (for Ryan) schemas.
3. Make the actual conversion stuff inline in the readers and writers. It should not use a separate class or method for this,
