Provide segment extractor for doc endpoint

Idea is to enable to extract either the description or the configuration (default being the current behavior, i.e. the full component doc).

Restriction is the same as currently: the data must have been created with the talend maven plugin (or gradle alternative) and not break the structure of the document otherwise the behavior will be undefined.
