Remove brave and move to geronimo-opentracing

Our server uses brave to integrate with zipkin, goal of this task is to use Microprofile Opentracing instead of brave stack. This task goes until ensuring the docker image we promote works with zipkin but the default setup doesn't activate it (it is ok to use setenv.sh to force the activation for instance and use a default META-INF/microprofile-config.properties to deactivate it).
